Nutrition research project

 

In effort to improve long term nutrition and health of refugees, a research team in Dr. Mani Nakamura’s lab will do nutrition outreach work. The idea is to formulate cooking classes that teach basic skills (food safety, shopping in the US, etc.) and nutrition concepts (reduce salt, cook with less oil, add fiber, etc.). To incentivize attendees, they would be provided a meal, food pantry products, and care for their children while at the class. The classes would potentially be bi-weekly on Thursdays or Sundays. The project is in the very beginning stages, so there would lots of room for student involvement. Right now, I see student needs for translation of handouts, speaking with attendees during the meal time, and assisting in the classes. I also have nutrition students available to volunteer, but they do not have a Spanish background.
